Gomtang and Seolleongtang
Gomtang and Seolleongtang are confused.
Both foods are made from beef or small accessories.
It is served in the form of soup. Similar. It can be confused.
Gomtang and Seolleongtang are completely different foods.
Gomtang is daegang. Daegang is a meat juice or meat soup.
It is "the broth made by boiling meat.
" Meat is called "Meat." It is lean meat from which the skin, fat, intestines, and bones have been removed.
The old name of Gomtang was Daegang-eup. Eup is a juice. Gang, eup, and juice are all soups.
Daegang and Daegang-eup refer to a large soup.
"Dae" means "basement" and "best" along with "big."
Gomtang is a large soup, the basis of all foods, and the best.
Korean food is set in Korean table. Rice, soup, and tangban are the basis of Korean table setting.
When performing ancestral rites, rice and soup are served at the front of the shrine.
Tangban is the basis of the table.
There is another soup on the ritual table.
It is Gomtang. The soup is at the front, and there is one more bowl of soup.
It's not Tangban, but Tangtangban.
It is awkward because the table setting between China and the Korean Peninsula was mixed.

Putting Tangban at the front is a ritual method on the Korean Peninsula.
Like the table we meet in our daily lives, the ritual table puts rice and soup at the front.
We add a Chinese Confucian table to our table.
We added Confucian Daegang to our table, Tangban.
It is a strange table that is rare in other countries.
It is a mixture of our way and Chinese way, transformed and developed into our way.
This is why two bowls of soup are placed on the table.
We steadily valued Gomtang by adding daegang and Gomtang to Tangban.
Mok Yi Saek (1328-1396), a civil official at the end of the Goryeo Dynasty,
was the academic and spiritual founder of Joseon, a Confucian country.
His disciple Poeun Jeong Mong-ju was the last loyal subject of Goryeo,
and Sambong Jeong Do-jeon laid the foundation for Joseon, a Confucian country.
Many of the people who protected Goryeo and those who founded Joseon questioned Mokeun.
Mokeun was the root of the Joseon Confucian noblemen.

Ceremonies collectively refer to food, food offerings, and etiquette related to food.
The beginning of food and food is Daegang.
It is difficult to explain "Gomtang = the best of food" more clearly than this. Daegaeng is today's Gomtang.
Gomtang, Daegang, and Confucianism began.
Sacrifice was considered the most precious in ancient rituals.
Sacrifice is a beast used in ancestral rites.
It was raw meat or meat slaughtered on the spot.
Sweared with blood of sacrifice and pledged to be an ally.
It proved that you and I are blood-stained ties.
Yukjeup, daegang, and gomtang are the best essence among sacrifices.
Blood is also one of the juices from sacrifice.
When you eat meat, another juice comes out.
It is meat soup, beef bone soup, or daegang. Blood, meat soup,
and beef bone soup are as precious as sacrifices.
This is why Gomtang is always used for ancestral rites.
Sagye Kim Jang-saeng (1548-1631) was the best scholar in Joseon.
All daily etiquette, including ceremonial occasions, was recorded.
It is the content of "Four-gyejeonseo_Volume 30_Garyejipram_Jerye."

There are two types of soup. They are Daegang and Hyeonggang.
Hyeonggaeng is a soup with vegetables. A long time ago, plum and salt were used as seasoning.
Daegaeng is not only seasoned vegetables, but also plum and salt, which are the basic seasonings.
Hyunggaeng tastes better because it adds seasoning and herbs.
However, no matter how delicious Hyeonggaeng is, it cannot surpass Daegaeng.
It is considered to be lowered to "small things such as Hyunggaeng."
To put it into consideration, the "two bowls of soup" of our table and ritual table are Daegang and Hyeonggang.
The soup placed next to rice is often vegetable soup.
It is a soup boiled with bean sprouts and radishes.
Season with salt, soy sauce, etc. It's Hyunggaeng.
We usually eat soup made of herbs. The "tang" of "tangban" is Hyunggaeng.
Hyunju is also meaningful. Hyeonju is clear water.
Hyeonju is the water of the memorial service that is carefully raised.
Jeonghwasoo, which our mothers brought with sincerity and paid tribute to, is also Hyeonju.
Both Hyunju and Daegang taste poor. It doesn't stand out and is subtle.
That's why I think it's precious.
North Korea has been trying to make "beef soup with this rice" since the Kim Il-sung era. Beef soup is beef bone soup.
This Rice + Gomtang is a long-standing dream of the Korean Peninsula.
The North was not finally achieved, and the rest were achieved.
Gomtang, Gomguk, and Tangguk boiled with beef meat were the best foods even in the Joseon Dynasty.

The act of "Can't escape the criticism of others" is that Jeong Gyeong-se (1563-1633),
a member of the Yejo Cham, was injured during the Japanese Invasion of Korea in 1592,
and ate meat (yukjeup) during the funeral.
It is a sin to eat meat in the middle of the table.
It's an act that shouldn't be done as a nobleman.
Sangju delivers news for at least three years.
News is, plain rice without side dishes.
Reduce and reduce daily food, let alone meat.
Wear rough clothes and eat rough meals. Sangju ate meat? It feels like impeachment.
About 10 years later, in August (1611), the 3rd year of Gwanghaegun, Saganwon impeached more severely.

Jeong Gyeong-se suffers from "eating meat in Sangjung" for more than 20 years.
If it is easy, they will be impeached, and sometimes they will stop living as government officials.

Interestingly, it is argued that what Jeong Gyeong-se ate was not meat, but meat juice.
Unlike meat, the juice was recognized as the patient's personal use.
In November of the 3rd year of Gwanghae-gun, Song Gwang-guk, a real temple in Sangju, and others will file a joint appeal.

Juicy is Bosingyong, so it means forgive me. Gomtang was still a valuable food.
Not only the servants but also the king could not eat gomtang or gravy during the funeral.
In the 4th year of King Sejong (1422), King Taejong died.
For King Sejong, King Taejong is a heavy being.
He is a father, a teacher, and succeeded in power to himself, a third son.
Sangju is Soseon. It is impossible to eat not only meat, but also daegang, yukjeup, and gomtang.
Sejong almost cuts off the grain.

They all recommend "yukjeup."
Yukjeup, daegang, and gomtang are this much food.
Daegang was also cited when reviewing poetry.
Eupchwiheon Park Eun (1479-1504), who was famous as a poet,
died at a young age (25 years old) due to sudden self-harm.
His friend Lee Haeng (1478-1534) collected poems left by Eupchwiheon and published a collection of writings.
It's Eupchwiheon Yugo. In the preface, Lee Hae-eun said,
"It's like a daegang that doesn't taste good (Park Eun-ui's poem) flows naturally and doesn't rest."
It's natural and desperate. Whether it's withered or food, it's the best treat.
Seolleongtang and Gomtang are different.
The Seolleongtang Nopo in Seoul opened in 1904.
The oldest gomtang restaurant opened in 1949 the Korean War.
There is a 45-year difference.
Why did the beef bone soup restaurant open late?
Seolleongtang is a food on the street.
Boil bones, intestines, head meat, etc.
I came out to the market early.
Beef bone soup is boiled with meat.
It's welcome food.
The distinction between the table has collapsed, but there are still few "noblemen" who trade food with the table's food.
In the promotional phrase of the oldest Gomtang restaurant in Seoul, there is an expression,
"Gomtang boiled with Bukchon Mana's cooking skills." Bukchon is a symmetric word for Namsan Mountain.
In Namsan Mountain, many people with low government posts, no classes, and scholars lived.
It's the end of Hanyang City Wall. Bukchon is next to Jeonggung Palace, Gyeongbokgung Palace.
Today, it is the area of Gahoe-dong in Samcheong-dong.
High-ranking government officials and powerful people lived.
Gomtang made by Bukchon Mana-nim is a welcome food.
