How to make cucumber kimchi.
Adding chives, a perfect match for crunching cool cucumbers, not only prevents cucumbers from resting easily, but also doubles nutrition.
1. How to cook.
1) Ingredients.
· Main ingredient: 5 cucumbers (1kg)
· Ingredients: 1 1/2 zoom of chives (75g), 4 cups of hot water (for pickled cucumber), 2 tablespoons of salt (for pickled cucumber) (20g), 3 tablespoons of seasoned ingredients (green onion) (30g), 2 tablespoons of garlic (minced garlic), 1 teaspoon of ginger (for chopped ginger) (3g), 5 tablespoons of red pepper powder (3g), 1/2 tablespoons of shrimp (25ml).
· Alternative ingredients: chives → radish sprouts (Instead of chives, radish sprouts can be cut into bite-sized pieces about 2cm and become delicious cucumber kimchi.)

01. Wash cucumbers with salt. After cutting it to 6cm long, leave about 1cm at both ends and make a cut in the middle with a cross. Dissolve salt in hot water, pour it over cucumbers, soak it, and rinse it in cold water (about 30 minutes). (If you soak it in hot water, the cucumbers become crunchy and do not soak easily.)
02. Wash the chives clean, drain them through a sieve, and cut them into 3cm long pieces.
03. Put seasoning ingredients in a bowl, mix them evenly, add chives, and mix them evenly.
04. Fill the cucumber with chopsticks and put it in a storage container. Mix the remaining chives with 1/2 cup (100ml) of water and pour it over the cucumber basket.
